4My experience with smoker

I used to have "Little Chief" top-loading electric smoker years ago thatI used mostly for fish. Worked great. When I pretty much stopped fishingI got rid of it; it was in sad shape. I had been slow cooking ribs onmy 15 year old 2-burner Char Broil gas grill putting them on foil onthe warming shelf. This took constant monitoring to suppress fire fromthe run off grease. I got this smoker hoping it would maintain a constanttemperature and no fire. This it does fine. However, it does notproduce enough smoke to satisfy me. Research online show this to be a commoncomplaint. The problem is, I think, that because the heating element is turningon and off to maintain temperature, it does not keep the chips in the holdersmoldering. This smoker is well insulated, which exasperates the problem.I contacted Char Broil about this and they said if I wanted more smoke,add more chips. Duh, now why didn't I think of that!I bought a Smoke Daddy device and installed it on this smoker. This isa aluminum cylinder that attaches by a one inch pipe through the side of thesmoker. You fill it with chips and heat it from below with a propane torch to get it started and put on the end caps. It comes with a pump that forces air through the unit and into the smoker. This unit produces all the smoke you could want. It runs maybefour hours on a filling. I wap it with a mallet occasionally to settle the chips. Problem solved.The smoker came in a factory box that appeared to be undamaged. However, there were several small dents here and there on the unit. This I assumewas done at the factory. These do not affect the operation of the unit.Also, I find that the hinges are slightly adjustable to improve the fit of the door. I slip a piece of foil under the heating element and spray everythingwith vegetable spray including inside the Smoke Daddy (smokedaddyinc.com). This significantly aids in the cleanup. I like the idea of a removabletemperature control and element. As there is no internal wiring or computers,one can probably turn the hose on the inside (I did). If you drill a hole for the Smoke Daddy pipe, make sure you leave enough clearance to unscrew the S.D.I didn't consider this and lucked out in just clearing the smoker's handle when rotating the S.D.The spec calls for a 11/16 hole (I think). I did have this size and a large drill to spin it. Your results may vary. By the way, the Char Broil cover forthis smoker is quite nice.Possibly the smoker could be larger. Two pork rib slabs and six large chicken breast completely filled it. I'm going to try putting the ribs in a vertical rack for more efficient use of space.16 Sep 11I found a vertical rib rack at Target made by KitchenAid that has a footprintmuch the size of the inside of the smoker. As I'm not using the chip pan for the smoker, I turn the bottom water and chip shelf over, and as the chip pan holder normally sits lower in that shelf, the frame portion that holds it now sits higher and more orless locks the rib rack in place. Pretty clever! This rib rack holds four truncatedport rib slabs. In my case, I cut them to about 15 inches so they don't flop over too much.Using this rack and the other three shelves, I was able to smoke six slabs with a little cut and pasting for a total of 24 pounds. That is about max with this setup.30 Dec 11For Christmas I smoked a 23 pound turkey in this unit. Here's how I did it:I took a say 1/4 X one inch strip of stiff wood that reached from side to side and centered on the top of the smoker. Drilled a 1/4 inched hole through the wood andthrough the top of the smoker. Put a eye bolt through the hole from the inside.After brining the turkey, I wrapped a few turns of twine around the turkey from the neck hole to the leg bones and forming a small loop at the leg end. Make sure the leg bones are secured to the loops as this will be the top and preclude the turkey inverting out of the loops. Another couple of loops cross ways to secure the wings.I used a small "s" hook to hang the turkey from the eye bolt.I smoked it using mesquite for about nine hours at 240 degrees. Towards the end,I spayed it with olive oil which gave the finished bird a lovely golden color.The turkey was, of course, delicious.

4Char-Broil Electric Smoker

My Wife and I live in a condo which does not allow Barbquing. I purchased the electric smoker because there was not an open flame and the less likelyhood of a fire hazzard. We cooked some marinated pork and beef ribsa along with some sausages following the instructions. After four hours of smoking we had the some of the most tender meat we had ever tasted. However, the one thin I noticed was the lack of a strong smokey flavor like on a charcoal wood burning grill. This was the very first time I have ever used anything other then charcoal.

My frist time to use a smoker,The ribs had great flavor and the chicken,out of bounds.I would tell everyone to get this unit.So easy to use
